Quinoa, courgette & feta salad
This looks absolutely delicious! I MUST TRY IT. I’m such a fan of the nutty taste of quinoa and mix in my all time fav courgette and MAMMA MIA. I think I’d top it with some nuts for an extra protein fix, either pine nuts or perhaps a cheeky pinch of flaked almonds - MM!

I got bored of pretending to apply for jobs so decided to make some tasty tomato tartlets! MMMM. I procrastinate in strange, strange ways. Buut the result was damn tasty so all is well. 

To make these tasty little tarts:

Simply cut squares of puff pastry out (yes I buy ready made pastry no that does not make me a bad person/the devil). Slather on some Dijon mustard (or whatever type you have lying about) and top with a slice of tomato. I added a cheeky pinch of cheddar cheese, a basil leaf (harvesting my herb garden at long last), and a cheeky sprinkle of salt and pepper. Bake at a medium heat for 10-15 mins and enjooooy. 

The mustard gives the tarts just enough of a lift for it not to be a boring snack. In fact, these bad boys would make a great dinner party canapé! I intended to leave some for my flatmate but I had the post run hungries so err ate them all. Guilt has never tasted so good.
